Caprese Avocado Toast

This Caprese avocado toast is a little bit lunch, a little bit snack, and entirely delicious. Creamy avocado meets classic Caprese flavors on a crisp slice of bread. It comes together in five minutes with almost no cooking.

Ingredients

  • 2 thick slices sourdough bread
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 4 oz fresh mozzarella, sliced
  • Handful of fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • 1 clove garlic, halved
  • Salt and pepper to taste
  • Red pepper flakes to taste

Instructions

  1. Toast the sourdough slices until golden and crisp.
  2. Rub each warm slice with the cut side of the garlic clove for extra flavor.
  3. Mash the avocado with a pinch of salt and pepper, then spread it over the toast.
  4. Layer the mozzarella slices and halved cherry tomatoes on top.
  5. Tuck the fresh basil leaves between the tomatoes.
  6. Drizzle with olive oil and balsamic glaze, then finish with red pepper flakes and a pinch of salt.

Tips

  • Use the ripest avocado and tomatoes you can find for peak flavor.
  • Make your own balsamic glaze by simmering balsamic vinegar until syrupy.
  • Add a fried egg on top to turn it into a heartier meal.
