An oil’s smoke point is the temperature at which it visibly breaks down and starts sending up thin blue smoke. It matters mostly for flavour: past that point the oil turns bitter and acrid, and it takes the food with it.
What it isn’t is a wall you slam into. Oils degrade gradually as they heat, and the smoke you can see is a late symptom, not the first one. That’s why two cooks can use the same bottle at the same heat and only one of them ends up with a pan that tastes like a struck match.
What is actually happening when oil smokes
Heat breaks the fat molecules apart. Free fatty acids and small volatile compounds come off first, and those are what you’re smelling. Acrolein, the sharp compound that stings your eyes and makes a kitchen unpleasant, is one of the products. The oil left behind is also thicker and darker, and it clings to food differently.
The practical version: an oil pushed past its limit tastes burnt even if the food isn’t. I’ve done this with toasted sesame oil more times than I’d like to admit, throwing it into a hot wok as a cooking oil instead of adding it at the end. Everything in the pan came out tasting faintly of ashtray.
The other useful detail is that free fatty acid content drives the smoke point down, and free fatty acids increase as oil ages or gets used. Your bottle’s smoke point today is not what it was a year ago.
Why every chart you find gives a different number
Look up sunflower oil and you’ll find 225 C on one site and 246 C on another, both stated with total confidence. Neither is lying. Smoke point isn’t a fixed physical constant like a boiling point.
It shifts with the crop, the pressing, how much the oil was filtered, how long it sat on a warehouse shelf, and the exact test method used, which is genuinely not standardised between sources. Batch to batch variation within one brand is real.
So treat every number below, and every number anywhere else, as a range with a shrug attached. The useful skill isn’t memorising figures. It’s knowing which oils sit in the high group, which sit in the middle, and which have no business near a hot pan at all.
Refined and unrefined are not the same oil
This is the single biggest thing people get wrong, bigger than any brand argument.
Refining strips out the particles, free fatty acids and plant fragments that scorch first. What’s left is nearly flavourless, pale, and much more heat tolerant. Unrefined oil keeps all of that material, which is exactly where its taste lives, and exactly what burns.
The gap within one oil is huge:
- Unrefined coconut oil sits around 175 to 190 C. Refined coconut oil reaches roughly 200 to 230 C.
- Toasted sesame oil starts smoking around 170 to 180 C. Refined plain sesame oil holds to about 210 to 230 C.
- Unrefined sunflower oil is a low-heat oil, somewhere near 105 to 160 C. Refined sunflower is one of the highest, around 225 to 250 C.
So “is sunflower oil good for frying?” is an unanswerable question. Which sunflower oil? Read the bottle. If it says cold pressed, virgin, unrefined or extra virgin, it’s a flavour oil first and a cooking oil second.
The ranges, roughly

Among the neutral oils, honestly, the differences at the stove are small. Refined canola, refined sunflower and refined peanut all fry well and all taste of very little. Peanut has a faint sweetness that suits chicken. Rice bran is my favourite for a wok because it takes hard heat without complaining and doesn’t foam much. Canola is the cheapest per litre almost everywhere, which is a real argument when a deep fry eats two litres.
Deep-frying: the one job with a genuine floor
Deep-frying runs at 175 to 190 C. That’s the target for the oil itself, and food dropped in pulls it down 15 to 20 C instantly, so you need headroom above the target rather than a squeaker.
Pick an oil with a smoke point at least 30 C above your frying temperature, which rules out anything unrefined and rules out butter entirely. Refined peanut, refined sunflower, canola and rice bran are the standard choices for a reason.
Volume matters as much as the oil. Three litres in a deep pot recovers temperature far better than one litre in a shallow one, and a thermometer costs less than the oil you’ll waste guessing. When I make crispy fried chicken, I hold at 165 to 170 C rather than 180, because the thigh needs time to cook through and a hotter pot gives me a dark crust over raw meat.
Chips are the opposite: two stages, around 160 C to cook the potato soft, then a rest, then 190 C for two minutes to blister the outside. That’s the method behind proper fish and chips, and skipping the first fry is why home chips go limp.
Searing and shallow-frying
A dry cast iron pan on full domestic heat gets to 230 C or higher, well past most oils. But the moment food hits the pan, its surface moisture drops the contact temperature sharply, and the oil under a steak is nowhere near as hot as the bare metal was.
That’s why people successfully sear in butter and get away with it, and why a smoking pan before the food goes in is normal rather than a disaster.
For a hard sear I use a thin film of a refined neutral oil, get it just shimmering, then add butter in the last two minutes for flavour and colour. Butter alone from the start burns before the crust forms.
Stir-frying is its own case: very high heat, constant movement, seconds not minutes. Refined peanut or rice bran, and the toasted sesame goes in off the heat right at the end. That’s the order I use for a quick veggie stir fry, and reversing it wastes both the sesame and the vegetables.
Roasting: fat quantity beats fat type
An oven at 200 C heats food far more gently than a pan at 200 C, because air transfers heat slowly. Oil on a tray of vegetables sits well below the oven’s set temperature for most of the cooking time.
Which means almost any oil works for roasting, including extra virgin olive oil, and the choice comes down to taste. Olive oil for Mediterranean vegetables. Ghee or tallow for potatoes, because they crisp harder. Neutral oil when a strong marinade is doing the talking.
The mistake I see more often is not enough oil. A tray of roasted vegetables needs about a tablespoon per 400 g of vegetables, tossed with your hands so every surface is coated. Dry patches steam instead of browning, and no oil upgrade fixes an undressed tray.
Raw oil: dressings, drizzles and the good bottle
Here the smoke point is irrelevant and the flavour is the entire point. Unrefined oils that can’t take heat are outstanding cold: walnut, cold pressed rapeseed, pumpkin seed, a peppery new-harvest olive oil.
A dressing wants roughly three parts oil to one part acid as a starting point, then adjusted. Salt goes into the acid first so it dissolves. A Caesar dressing is the exception that proves the rule, using a milder oil precisely because a strong peppery olive oil fights the anchovy and the parmesan.
Tangent worth having: if your good olive oil tastes harsh and catches at the back of your throat, that’s not a fault. That bitterness and burn are markers of a fresh, well-made oil, and they fade with age. Some people hate it. I’d rather have that than a bottle that tastes of nothing.
The olive oil myth, put to rest
You’ll be told extra virgin olive oil can’t be heated. It can.
Its smoke point sits around 190 to 210 C, which comfortably covers roasting at 200 C, sautéing, shallow frying, and every normal pan job in a home kitchen. Plenty of Mediterranean home cooking has been done in it for a very long time, at heat, with no drama.
What you do lose at high heat is the flavour you paid for. The delicate aromatics that make a fresh oil worth 15 dollars a bottle cook off, and you’re left with an expensive plain oil. That’s a cost argument, not a safety argument.
My compromise: a cheap everyday olive oil for cooking, a small good bottle for finishing that never touches a hot pan. For a true deep fry, no, don’t use extra virgin, because two litres of it is absurd and it’s below the comfortable headroom anyway.
Reusing frying oil without ruining the next batch
You can reuse frying oil. Restaurants do it constantly. The variables are what you fried and how hot it got.
Clean, unbreaded frying like potatoes or doughnuts gives you six to eight uses. Battered or breadcrumbed food sheds solids that carbonise, so three or four is realistic. Anything fishy, use it for fish again and nothing else.
Filter it while it’s warm but not hot, around 50 to 60 C, through a fine sieve lined with a coffee filter or a double layer of muslin. It takes about twenty minutes to drip through and it is the single thing that most extends the oil’s life. Store it in a sealed opaque container, in a cupboard, not on the counter.
Bin it when any of these show up: the colour has gone from pale gold to strong tea, it foams across the surface when food goes in, it smokes noticeably earlier than it used to, or it smells sour, fishy or like old crayons. One of those is enough. Don’t pour it down the sink; let it solidify or seal it in the original bottle for disposal.
Rancidity, storage, and the bottles worth owning
Oil goes rancid from three things: heat, light, and air. The bottle next to the hob is getting all three. Move it to a cupboard, even if that costs you three seconds per use.
Rancid oil smells like old nuts, putty or wax crayons, and it tastes flat and slightly sticky at the back of the mouth. Once you’ve noticed it once you’ll never miss it again. Nut oils and flaxseed go first, often within weeks of opening, so those belong in the fridge. Toasted sesame too.
Buy small. A 500 ml bottle of good olive oil you finish in two months beats a 3 litre tin you’re still working through next spring. The exception is the neutral oil you deep-fry with, where a big cheap bottle makes sense because you’ll use it in one go.
The kitchen I’d actually build: one litre bottle of a refined neutral oil, canola or sunflower or rice bran, for frying and any job where the oil should be invisible. One everyday extra virgin olive oil in a 500 ml to 1 litre bottle for roasting, sautéing and most dressings. One small good finishing olive oil, and if you cook Asian food, a small toasted sesame oil beside it. That’s it. Four bottles at most, three of which live in a dark cupboard, and every other oil on the supermarket shelf is a specialist you can buy when a specific dish asks for it.
